Whole Pig Autumn Harvest From Bonner Farm!

Hi Everyone! This year beginning in late Augus 2012, our farm will be offering approximately 30 beautiful, healthy young pigs for sale as whole animals. If you are interested in stocking your freezer with some scrumptuous, healthy pork this can be a good opportunity to do so.

Our heritage breed of pig, called Large Black Hog, is known for its excellent meat and fat (from which you can make lard – a healthy cooking/baking fat). The pigs live out on pasture which is managed on an organic basis. They are grazing pigs and do forage quite well on the rotated pastures.

We feed our pigs excellent feed from Coyote Creek Organic Feed Mill in Elgin, TX. This feed is certified organic and certified non-gmo and is freshly prepared for the pigs we raise here. When in season, we also give the young piglets raw milk from our AGA certified grassfed cows (the cows receive ccofm’s certified organic and certified non-gmo alfalfa pellets and their certified organic minerals.) The cows are also out on rotated pastures, but, if they require hay it is conventional at this time. None of the farm animals receive any synthetic chemicals of any type.

The young pigs live in family groups. All the pigs live in roomy pastures with nice shelters and fresh running water to drink along with their wading pools. The youngsters are guarded by two faithful Maremma dogs for the best protection.

We have 20 beautiful 4-month-old pigs which are doing very well. They are approximately 80 to 100 lbs. live weight as of early august. In addition, there are also 9 five-week-old males that are doing very well. They will be weaned at the ninth week.

If you are interested in a pig you will need to tell me what size pig you would like and when and how you would like it processed (example: keep it as a whole pig or have it made into cuts and want it in September, ’12).

We use the Harvest House Farms (USDA certified) in Johnson City, TX for customers who request a whole pig with skin, head and feet on (as for a presentation pig for a party).

We use Dutchman’s Market in Fredericksburg, TX (USDA certified) for pork cuts. You can have your pork vacuum sealed and frozen or paper-wrapped and frozen.

Once your order is placed your pig will be reserved for you and brought up to the desirable weight as close as I can get it. I have a digital pig weighing scale, so weights can be approximated closely. If you would like a whole pig (with the skin, head and feet on) the pig when processed will weigh about 75% of the live weight. If you would like a pig that is made into the cuts that you specify then you will not be able to have the skin or feet –however, you can have the head. this will cause the carcass weight to be about 60% of the live weight or perhaps a bit more with the head included.

All the male piglets are neutered humanely at the farm before one week of age and all the piglets are weaned at 2 months of age.

Pricing of the pigs:

I am pricing the pigs based on feed consumption costs so there may be some pigs in the litter who are larger at the end of each month then others in the litter. This is a natural phenomenon of group feeding. So, the sooner you order the more likely you can get the larger piglets in the group – so you can get more pork for your money!

2-month-old LBH piglet = $125.00 (ex: raise up on your farm)
3-month-old LBH piglet = $210.00 (ex: raise up on your farm)
4-month-old LBH piglet = $325.00 (this would be a small, very tender delicious pig)
5-month-old LBH piglet = $436.00 (this would be a little larger, very tender delicious pig)
6-month-old LBH piglet = $548.oo (by this age they should have an average carcass weight of 100 lb) –price per pound is $5.48
7-month-old LBH piglet = $660.00 (by this age they should have an average carcass weight of 130 lb) – price per pound is $5.08
8-month-old LBH piglet - $770.00 (by this age they should have an average carcass weight of 150 lb) – price per pound is $5.14

A deposit of 80% is required to reserve your pig at the time of order. You can mail the check to me at Bonner Farm P.O. Box 5724, Valley Spring, TX 76885. Or, you can come visit the pigs and pay at that time (it is best to make an appointment).

The remaining 20% and the delivery fee is due at the time you pick up your pig from the processor. You can also send a check at that time.

This cost does not include the cost of processing. I will now explain the processing costs:

If you want a whole pig done at Harvest House Farms the cost is approximately $50.00 +/- for a large pig and less for a small pig. It will be chilled and in a large plastic bag and you must go there and pick it up about 2 days after it is prepared for you – generally a Friday, Saturday or Monday. They generally process pigs 1 time per month about mid month and i need to know about your order preferably about 2 to 4 weeks before to set up the appointment with the processor.

If you want your pig made into cuts (your own custom order that you can tell the butcher) and then frozen, then the pig goes to the Dutchman’s Market and they will charge $ 30.00 for the butchering fee, $1.45/lb for making the cuts you request if vacuum sealed and frozen or if you would like it just paper wrapped then the cost is $0.65/lb. They charge an additional $1.45 per box for storing the meat in. I need to know at lest 4 weeks in advance to schedule a date for processing at DM.

Depending on how many pigs I am taking to the processor at one time, there is going to be a delivery fee to bring the pigs to the processor. It can range from a maximum of $50.00 to a minimum of $15.00. This will be added onto the final fee paid at the time you pick up the pig. At the time you go to the processor, you will need to pay the remainder of the balance due to Bonner Farm (20% plus the transport fee) and you will also need to pay the processsor’s cost at the processor when you pick up your pig.

I feel that these pigs will provide very delicious and nutritious pork and fat. I try to take the best care of raising wonderful, happy pigs and I love being part of the sustainable, local food community.

Our cows are healthy, happy animals who do not receive any drugs or chemicals.Our land is managed on an organic basis.

HERITAGE PORK (THE LARGE BLACK HOG)

We raise the Heritage breed of pig = THE LARGE BLACK HOG! The pork they provide is known for its excellent flavored meat and fat. We love them because they are very nice to have on the farm with their sweet temperaments and docile natures.These happy animals live out on rotated pastures in family groups. They are fed the best food from Coyote Creek Organic Feed Mill which is a custom blend that compliments their daily foraging of grasses and other plants that grow in our organically managed fields. In addition, when in season, we provide them with raw whole milk from our grassfed cows which they like very much.

They live healthfully without any chemicals or other synthetics and the land is managed organically as well.

We have two faithful Maremma guardian dogs who live with the youngsters and do an excellent job of protecting them.
